Vegan chocolate mousse

This vegan chocolate mousse is so creamy  and smooth, you won’t believe it is made with water chickpeas.

You can easily change the recipe by adding a layer of fruit puree inside for instance or hazelnuts, dry fruits, chunks of chocolate of you want something more crunchy. I suppose you can use milk or white chocolate as well.

Here are the ingredients :

  • 200 grams of dark chocolate.
  • 1 can of chickpeas.
  • maple syrup or coconut flower syrup.
  • vanilla extract or powder.
  • a pinch of Espelette pepper.

How to do :

  Drain the chickpea water into a large glass bowl and, using an electric egg whisk, whip the chickpea water into stiff peaks. Add a pinch of Himalayan salt.

  Then, add the chocolate, maple syrup,  vanilla and the pepper.

  Put the mixture into individual glasses and keep them in the fridge for minimum 4 hours.. Overnight is better.

You can create a delicious hummus with the chickpeas. Just mix them with tahini, lemon juice, salt, pepper, garlic, parsley and coriander for instance.
