I love leeks but it is pretty recently that I’ve discovered the raw version. Now, I prefer it raw…by far, I can’t eat them cooked anymore;) So here is a very simple recipe to make a raw leek salad.
- Finely chop the leek with a good mandolin.
- Marinate in lemon, tamari, hemp and wheat germ oils.
- Sprinkle with see vegetables, sesame salt, dries cranberries and pumpkin seeds, hemp seeds.
- black olives.
You can keep it between 2 and 3 days in the fridge.
